Kale Guacamole with classic sweet fries by @haley_ferretti 💚
Recipe⠀
For the guacamole:⠀
-3 ripe avocados⠀
-¾ cup of red onion ⠀
-¼ cup of finely chopped unstemmed kale⠀
-¼ cup of cilantro⠀
-juice of 1 lemon ⠀
-3 or 4 cloves of garlic chopped⠀
Blend all ingredients above until chunky texture forms and serve with your favorite fries recipe (of choice) We love it with sweet fries. Enjoy! #letscookvegan
I cooked up a couple of @drpraegers veggie patties and stuffed ‘em between 3 buns along with iceberg lettuce, sliced tomatoes, thin slices of red onion, pickles + lots of homemade oil-free mayo.
it was the best dang veggie burger I’ve had in awhile
a little hard to eat but I managed 🙃
oil-free mayo
ingredients:
½ block of silken or soft tofu (I use soft because I like my mayo a bit thicker)
2 tbsp lemon juice
1 tsp cane sugar
½ tsp sea salt
½ tsp ground mustard
¼ tsp white pepper

blend ingredients in a blender or food processor until creamy
oil-free mayo keeps in an airtight container refrigerated for about a week
